Famous Blowing Rock at www.theblowingrock.com is the perfect day trip or week-end trip with hiking, shops and beautiful scenery in the mountains of NC near Boone, less than 2 hours form Charlotte.  Also in the under 2 hours category is Chimney Rock, at www.chimneyrockpark.com next to Lake Lure you can hike the trails of gorgeous Chimney Rock (Where you might recognize some of the cliffs and paths from The Last of the Mohicans.)  This is an easy day trip but is a very popular destination so if you plan to spend the night call ahead for reservations. Grandfather Mountain at www.grandfather.com has a fantastic "swinging" bridge and spectacular summit for the out doors type.  I t should be noted that all of these are private parks and charge admission, check on their site for details.
